French Canadian Style Split Pea & Ham Soup: Easy Recipe

Whenever I have a leftover ham or ham left over, I love to make pea soup .

I am Canadian and perhaps that’s why I love the French Canadian style , as it’s what is common here.

This recipe is easy and very forgiving. A use what you have kinda thing.

If you can though , use a ham bone as it gives so much flavour.

French Canadian Style Split Pea Soup with Ham

Ingredients

1 large ham bone if you have it

4-6 cups broth veggie or chicken

2 cups dried yellow split peas

I medium sweet onion diced

2 medium carrots , diced

1/2 cup diced ham ( work with what you have . If you don’t have a ham bone use more diced ham )

1 clove garlic minced

1-2 cups water

In a deep pot sauté onion until almost soft Add garlic and carrots . Sauté until garlic is cooked.

.Add peas , hambone , ham, broth .

Cover the peas but go about 2 inches higher with liquid . Add 1-2 cups water Cover for 25 mins medium heat on burner .

Reduce heat to low simmer , half cover , stirring often until thick and peas have split and cooked, liquid reduced .

Takes awhile but it’s worth it. 2 -3 hours or do in crockpot on low 6 hours

This is a great and filling meal for the cold nights coming. I have made it in the crockpot and stove top many times with success and the Crockpot version is great for busy nights .

Pair with some rolls and fresh bread or a grilled cheese and it’s dinner !

Easy Meatball & Tomato Sauce Recipe

Today I realized I still had a large bowl of garden tomatoes to use up before they rotted. I don’t know about you, but I am sick of dealing with the garden’s summer bounty.

It was one more bowl tho so today I trudged on.

Today I’ve also included a recipe for super easy baked meatballs that you can make with ground beef or turkey , probably even chicken but I have never tried. They freeze wonderfully which is what I did with most of today’s meatballs.

Meatballs:

2 lbs ground beef ( use what you have )

2 eggs beaten

1 cup seasoned Italian bread crumbs

1/2 cup shredded cheese ( I used Cracker Barrel herb and garlic cheddar )

1/4 cup minced onion ( used sweet)

1 tsp garlic powder

Combine together. Form balls. Put on parchment paper on cookie sheet. Bake at 350 for 20-25 mins.

Tomato Sauce:

About 2-3 cups chopped and cored tomatoes

1/4 cup minced onion

3 cloves garlic chopped

3 tbsp tomato paste

2 tbsp oil

Sauté onion with oil until soft . Add garlic . Cook two mins . Add tomatoes

Simmer until tomatoes start to break down . Add the tomato paste.

Simmer low heat about an hour until tomato has cooked down and water is cooked out .

Easy 1 Pot Chicken & Noodles : Recipe

Been awhile since I have been able to get a post up . Sometimes life and kids just get in the way . Even of the things we enjoy doing.

This recipe is perfect for those days where life gets in the way.

It’s a great dish for those days you get home from work late and want a quick but home cooked meal .

You could use egg noodles or different pasta shapes if you prefer but I think flat and wide is best . I think some peas would be a good addition as well.

Chicken & Noodles

Ingredients :

2 large boneless skinless chicken breasts ( I’m

Sure you could use thighs or something tho ) – I put mrs dash on them

1/2 onion diced

2 medium carrots diced

1 cup broth ( I used one of those concentrated knorr chicken broth things and added a cup of hot water )

1 1/2 cup milk ( I used homo because my kids drink it and I have on hand )

1 tsp thyme

1/2 tsp pepper

1/2 package noodles broken in half . I don’t even know what mine are called but they look like lasagna noodle pieces . Egg noodles would work. Or fettuccine

Medium heat brown the chicken with some

Oil butter

Add the onions and carrots

When the onions are cooked , add the broth spices milk and noodles .

Cover and simmer for 10 mins

Uncover stir lower heat and cook until sauce has reduced and noodles are tender

Remove from heat . Let stand 5 mins

Easy Banana Bread: Recipe

Most weeks I end up with a few battered and rejected bananas from my husband’s lunch box or half bananas the children haven’t eaten.

More often than not a quick bread or muffins are my go to . This banana bread recipe is a great one to have at hand as it’s versatile and easy.

Use whatever fat you are comfortable with . I’ve had great results with both butter and coconut oil but surprisingly I prefer the coconut oil in this recipe.

Add in whatever fruit you need to get rid of . I’ve done banana and blueberry or even apple cinnamon instead of banana.

Banana bread

3 large bananas mashed

3/4 cup brown sugar

1 egg beaten

1/2 tsp vanilla

1/2 cup coconut oil

1/4 cup milk ( whole )

1 tsp baking soda

1 tsp baking powder

Pinch of salt

1/2 tbsp cinnamon

1 1/2 cup flour ( used tastes like white flour )

Combine egg , banana and vanilla, milk . Cream together sugar and oil in separate bowl.

Sift together flour , salt , baking soda and powder , cinnamon. Combine with remaining ingredients

Bake 350 25-30 mins .

Monday Easy Meal: Roast Chicken & Garlic Mashed Potatoes

Easy Roast Chicken w/ Garlic Mashed Potatoes & Gravy

Such an easy and comforting meal that comes together pretty quickly. A great idea for weeknight dinners as the weather gets colder.

I started with a couple chicken pieces . Whatever you have is find . Some chopped onion , celery , garlic and some sprigs of fresh thyme from my herb garden.

In the oven it went with a splash of water at 350 for about an hour

While the chicken cooked , I peeled and scrubbed some potatoes and boiled them until they were soft when poked with a fork .

In a piece of aluminum foil I roasted some garlic with the chicken about 25 minutes .

Drained the potatoes and squeezed a couple cloves of the roasted garlic into the potatoes . Added some butter , whole milk , spoonful or two of cream cheese and salt and pepper .

Heaven !

When the chicken was done I made a quick gravy with a bit of broth and bisto and flour .

Easy and yummy dinner in about an hour with very little actual cooking !

Tortellini Pasta Salad: Easy Recipe

It's been awhile since I've had the chance to make a blog post . Life gets in the way sometimes .

I'm sure you all can relate so I thought I would post a quick and easy recipe that would make a great side for dinner or to take to your next BBQ.

Ingredients
1/2 package fresh cheese tortellini ( you could use frozen this was just what I had ), cooked and cooled
1 large tomato finely chopped
1/2 cup sweet onion chopped thinly
1 tbsp oregano
1 clove garlic minced
1/2 cup shredded cheese ( I used mozz )
Salt and pepper to taste
Parmesan on top

With a tbsp or 2 of olive oil cook down onions and tomato until tomato bursts add garlic .
Let it cool

Combine veggie mixture with pasta . Add a drizzle of olive oil if it looks dry
Add cheese and salt and pepper and mix
Top with Parmesan and chill until ready to serve .

Such a great and easy dish for summer. My husband enjoys it so much he's having the leftovers as lunch today.

Strawberry Yogourt Muffins : Recipe 

I was a little over zealous in the produce department the past week at the grocery store and I ended up with a bit of fruit that had to be used before it ended up bad 

A full carton of Ontario strawberries that my daughter didn’t devour yet , was first on my agenda . 

These muffins are sweet , moist and a great way to make a dent in summer’s yummy bounty. 

This recipe is versatile . Use whatever berries or fruit that you need to eat quickly . A yogourt cup of whatever flavour and a bit of whatever milk your family likes using . If you prefer white flour use that . Or half and half . I can say that these turned out great with all whole wheat though .

Strawberry Yogourt Muffins

Ingredients

1 cup sliced strawberries

1/2 cup butter

2/3 cup white sugar 

1 egg beaten

1 tbsp vanilla 

1/2 cup yogourt 

2/3 cup milk 

1 1/2 cups whole wheat flour

1 tbsp baking powder

Pinch of salt 

Cream together butter and sugar . Add egg and vanilla . Then yogourt and milk 

Combine flour , salt and baking powder separately . Combine with wet . Stir in berries . 

Bake in a lined muffin tin for 16-18 minutes at 350. Top should be dry and sides just golden.

Zuchinni Bites : Recipe

Zuchinni is one of my favourite vegetables year round but in the summer lots of people have loads of it from gardens and are eager for new and yummy ways to use it up. 

Hey , there is even a national leave zuchinni on your neighbors door step Day !

Really. 

This recipe won’t make you leave the house but it will leave you with a bunch of yummy zuchinni bites that your kids and even your husband will love.

Ingredients 

1 good sized zucchini shredded . Squeeze water out of it 

2 beaten eggs

1/2 cup shredded cheese 

1 cup seasoned bread crumbs

Combine and drop by spoonful and flatten in fry pan with bit of oil or butter medium low. Until sides are golden

They freeze well and are versatile if you want to add spinach or other shredded veg. 

I keep in fridge or freezer and warm in toaster oven .

Breaded Parmesan Chicken Pasta

I love a good breaded chicken, but my absolute favorite is when I make my parmesan breaded chicken.  I decided to add a little twist to it by adding some spiral noodles as well.  My husband loved this meal!  It is a winner!

I just added bread crumbs, egg wash, and flour on some chicken breasts and then cooked it in some butter.  I also seasoned the chicken with salt and pepper.  In a separate pot, I cooked some pasta to go with it.  It’s somewhat simple to make but I don’t like all the dishes I use to make it.  After I finished the plating, I added some parmesan cheese shavings and some parsley on top and called it a day.

Sometimes the simpliest recipes are the best meals.

Loaded Potato Salad : Recipe 

I’ve made many potato salad recipes over the years as my family always enjoys it as an easy summer side dish or a quick lunch. 

This recipe may just be my new go to. 

It doesn’t involve any peeling or odd ingredients but it’s full of flavour and all the things you love about old fashioned potato salad.

It’s also easy to tweek to your liking or omit ingredients.

Ingredients 

About 4 larged unpeeled potatoes chopped and boiled  ( I used the equivalent of mini potatoes)

1/2 small Vidalia onion finely chopped

1 stalks celery finely chopped

5-6 slices of cooked bacon chopped 

3/4 cup mayo

1 tbsp yellow mustard

1/2 cup shredded cheese ( whatever kind you like )

Salt and pepper to taste 

3 hard boiled eggs peeled and diced 

Combine . Chill and enjoy !
