Water Challenge: A month later


A month ago, Ashley and I partaked in a water challenge.  It was truly what they say it is, a challenge.  Here we are a month later and here are my takes on this water challenge and what I thought of it.

For about a week and a half, it was relatively easy for me to drink water.  But for some reason it was getting more and more difficult to find the time to drink that much water.  I don’t know if it is because I was just getting lazy, if my children are the reason why I stopped drinking water as much, or if I just got sick of the flavor of the bland water.

But the first week and a half I drank between four to six jugs of water a day!  Then it slowly progressed to two or three a day and then went to just one and a half a day!  I started adding a bit of lemon juice in my jug to start getting back into drinking water again.

I also stopped wearing the belly band to help me lose weight.  This month has just been a very slow start for me as I don’t find myself that motivated to wear the belly band as much and I don’t find myself motivated to drink a bunch of water.  But in August, I will partake the challenge again once my kids are in school full time and I won’t be as distracted with my daughter talking my ear off.

I guess between the lack of motivation and the lack of eating healthy, I didn’t really lose a lot of weight.  I lost only one pound but I did lose two inches around my waist.  Another perk is that my boobs did get bigger and fuller.  Not sure how that happened.

Breaded Parmesan Chicken Pasta


I love a good breaded chicken, but my absolute favorite is when I make my parmesan breaded chicken.  I decided to add a little twist to it by adding some spiral noodles as well.  My husband loved this meal!  It is a winner!

I just added bread crumbs, egg wash, and flour on some chicken breasts and then cooked it in some butter.  I also seasoned the chicken with salt and pepper.  In a separate pot, I cooked some pasta to go with it.  It’s somewhat simple to make but I don’t like all the dishes I use to make it.  After I finished the plating, I added some parmesan cheese shavings and some parsley on top and called it a day.

Sometimes the simpliest recipes are the best meals.



Loaded Potato Salad : Recipe 

I’ve made many potato salad recipes over the years as my family always enjoys it as an easy summer side dish or a quick lunch. 

This recipe may just be my new go to. 

It doesn’t involve any peeling or odd ingredients but it’s full of flavour and all the things you love about old fashioned potato salad.

It’s also easy to tweek to your liking or omit ingredients.


About 4 larged unpeeled potatoes chopped and boiled  ( I used the equivalent of mini potatoes)

1/2 small Vidalia onion finely chopped

1 stalks celery finely chopped

5-6 slices of cooked bacon chopped 

3/4 cup mayo

1 tbsp yellow mustard

1/2 cup shredded cheese ( whatever kind you like )

Salt and pepper to taste 

3 hard boiled eggs peeled and diced 

Combine . Chill and enjoy !

Summer cravings


I have been having a strong craving lately for deviled eggs for some reason.  But I absolutely suck at making hard boiled eggs.  I don’t know why but I just can’t seem to do it right.  But last weekend I finally did it right!

So I made some deviled eggs over the weekend while my husband was outside with the kids in the pool.  I have been slowly but surely starting to work on this lady’s order as well too.  She ordered 400 Christmas cards from me so I have been getting things together to get that started.

It has been a very hot summer here though.  Today is supposed to get to 115 degrees!  I hate the summers because of the heat and I don’t like that my birthday falls in the summer either.  I don’t like turning another year older.

Kid Confession, Uncategorized

I can’t win.. I simply can not win



Parenting is one of the toughest challenges I have ever been dealt with.  I stay home with my kids while my husband works and it is an exhausting, but very rewarding, job that I have ever had in my life.

I love being able to stay home with my kids.  But some days I am just beyond exhausted with my emotions from having to answer my daughter’s 30,000th question.  She seriously asks me so many questions in a day my head is ready to just explode!  Some of her questions I don’t even know how to answer them so I make up an answer, some of her questions are seriously like eye popping-how did you come up with this question-where did this come from kinda question.

Other days I can’t keep up with her many emotions.  She’s happy with me when she wakes up but later on she gets mad at me and yells.  She gets mad at me if I don’t answer her question right away, she gets mad at me when I don’t look at what she’s showing me – sometimes I’m in another room so I can’t go to her fast enough, she gets mad at me if I don’t say certain things the way she wants it said.  She’s a bowl of mixed emotions most of the time.  It takes every fiber in my being to not get so frustrated.

I have started this entry about thirty minutes ago and she has interrupted my thoughts at least fifteen times by asking me a question or asking me to look at something.  Thank goodness Duggee is on Nick Jr right now to somewhat keep her occupied but it’s not really helping.  She loves this show for some reason.  I don’t like it at all.  It’s disturbing to me.

Time to do more cleaning since she’s a bit quiet.  Let’s get some cleaning started before she asks more questions!


Wordless Wednesday

Wordless Wednesday( almost ) Dinner Roundup 

I thought I would do something different today and do a wordless Wednesday post. Mine will be almost wordless tho as I will caption the photos for clairity sake.

Bread and loads of butter . Fusilli with spinach and kale slaw and leftover chicken.

Tri color fusilli with butter , garlic and cheese. BBQ chicken with Montreal chicken spice . Sautéed zucchini

I’ll Never Use White Sugar In My Chocolate Chip Cookies Again : Recipe 

I stumbled upon the idea to make chocolate chip cookies without white sugar out of necessity. 

I had told a friend that I would bake cookies for a child’s birthday party and when purchasing the ingredients I didn’t buy granulated white sugar because I thought I had some at home. 

Turns out, I didn’t . 

But I had a big bag of fresh brown sugar. 


Brown Sugar Chocolate Chip Cookies


1/2 cup softened butter

1 cup packed brown sugar

1 egg 

1/2 tsp baking soda

1 tsp salt

1 tbsp of vanilla

1 and 1/2 cups white flour 

1 cup chocolate chips

Cream together sugar and butter . Beat egg. Add vanilla to egg and combine with sugar and butter.

Stir flour , salt and baking soda . Stir in wet until almost mixed then add chocolate chips.

Bake at 350 on parchment paper lined cookie sheet for about 8 minutes.

Hope you love them as much as my family did.


Update on water challenge, a week later

So, it’s been a little over a week since I started the water challenge with Ashley.  Here is a brief update on this.

I feel like I am struggling on a daily basis on trying to find the desire to drink water.  I drink two cups of coffee everyday and lately after I drink that, I don’t want to drink anything else until my husband comes home from work, which is around 3:30.  But some days I have been drinking a lot (around three to four mugs) and other days I only drink two mugs.

My husband says he notices a difference in my belly size and according to my scale I have lost a few pounds as well.  But this is just one week in so far.  More to update next week.


Water Challenge

Water Challenge – Ashley Day 1-5

Jenna and I are in the midst of a 30 day water challenge to drink 64 oz of water daily.

Similar to Jenna the first day or two was relatively easy for me and I even went over my amount a bit.

Now on day 6 I am finding it a bit harder. 

3 pm and I am not even finished my second mug ( 40 oz) yet and yesterday on day 5 I only drank 40 ounces total of water.

Even after only a couple days I feel less wanting snack type foods and less bloated . I did notice when I didn’t drink the water on day 5 I felt more head ache ish but that could be weather related or diet related, as I am also making healthy changes in that aspect.

Looking forward to seeing and sharing with you, more changes and benefits of proper hydration and healthier eating.


Logic + Five Year Old Toddler = Don’t Mix

My daughter is almost five years old.  In fact, she is turning five years old tomorrow.  You would think things would be easier for me now that she is five, she’s a little more independent, she is capable of doing some things for herself, and she can verbalize her wants and needs.

But apparently, it doesn’t work that way in my house.  She is almost five and she requires a lot of my attention most of the time.  She asks me about a million and a half questions a day about random things.  Most of the time she asks me questions that I don’t have the answer to.  Other times she asks me questions that I just don’t know how to answer to make it appropriate for a five year old to understand.

Lately more than ever she doesn’t seem to understand simple logic.  She brings her Kindle Fire with her everywhere we go.  It’s the first thing she asks for when she wakes up and it’s the only thing she asks to bring with her when we go on car rides together.  She does know to limit herself from always being on it.  But when her Kindle Fire drops on the floor while I am driving and she demands I pick it up, I just simply can’t pick it up while I am driving.  So I tell her that I can’t because I am driving, she gets all mad and throws a fit in the car.  It sure makes for a fun car ride let me tell you!

I am looking forward to when things get easier with her.  I believed things would get easier when she could talk.  But now that she is talking, it just makes it harder to get her to understand things sometimes.  The only thing that is easy for me is that she’s able to tell me what she wants and needs.

Sigh.. this momma needs a break.
